Justin Smillie - Master of Slow Fires and All Things Braised

"Justin is the kind of guy you would want to be stranded with in an airport for a flight delay". I have heard this over and over again from my fellow Apron Squad Members, and after this conversation, I couldn't agree more.
The East Coast Convert with California roots infused his restaurant, Upland, with the best features of his hometown: natural oak, elegant leather, and California fruit-inspired murals.
Upland boasts dishes like five-lettuce Caesar salad, and pasta laced with chicken liver and sherry. Simple and done right.
Smillie just has good taste, and that is yet another reason why we are thrilled to collaborate with him on the final installment of the Hedley & Bennett Apron #GetInTheKitchen Challenge!
